Sparkling
Our current sparkling wines are made in the ancestral method, or more popularly referred to as "Pétillant naturel." These wines are bottled during harvest when the natural sugars from the grapes are still present shortly before fermentation has concluded giving a soft, playful sparkle with plenty of primary aromas. The bottles are aged until spring when they are disgorged and recapped to ensure a clean, brilliant wine.
